Coconut Sugar chocolate chip cookie bars

 Made this recipe from Half Baked Harvest because I had no white sugar and wanted to use up whole wheat pastry flour I had.

My thoughts:

1. Followed the recipe except for used half WWPF and half APP, I added 1/2 tsp instant espresso powder, no maca powder, and I omitted the TBSP of water (mostly because the batter was quite wet already because the almond butter I used was very drippy). 

2. Would never make again. Came out quite crumbly— and I can’t imagine to omission of the water is at fault here. 

3. Okay, updating this the next day to say that it gets a little better when rested. It would probably go well with ice cream to absorb the crumby sandy bits

INGREDIENTS

COOKIE:

  • 1 teaspoon ground flaxseed
  • 1 tablespoon water
  • ½ cup + 1 tablespoon almond meal (or hazelnut/sunflower seed meal)
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon ground cinnamon (optional)
  • ¼ teaspoon baking soda
  • 2 tablespoons maple syrup
  • 1 tablespoon tahini
  • 1 teaspoon avocado oil
  • ¼ teaspoon vanilla extract
  • 1 oz 28 grams dark, dairy-free chocolate, chopped (or 2 tablespoons chocolate chips)

GARNISH:

  • flaky sea salt
  • cacao nibs
  • sesame seeds
  • INSTRUCTIONS

    • Preheat the oven to 375°F. Line a small baking sheet with parchment paper.
    • In a small bowl, combine the ground flaxseed and water. Stir vigorously and then set aside for 5 minutes, allowing it to thicken/turn to a gel consistency.
    • In a medium bowl, combine the almond meal, salt, cinnamon (if using), and baking soda. Stir to combine. Then, add the flaxseed gel, maple syrup, tahini, avocado oil, and vanilla. Using a spatula, stir until the thick and slightly wet dough is combined and there are no dry spots.
    • Add the chocolate chunks to the cookie dough and fold them in until evenly distributed throughout.
    • Transfer the cookie dough to the baking sheet and press it out into an even circle that is uniformly 1-inch thick. Sprinkle the top of the cookie with flaky salt, cacao nibs, and sesame seeds.
    • Bake the grain-free tahini chocolate chunk cookie until the edges are browned and small cracks appear, about 10 minutes. Let the cookie cool completely (about 30 minutes) on the baking sheet before enjoying.

    NOTES

    • Make sure that your tahini is well-stirred and drippy! You could substitute any nut/seed butter you like as long as it’s drippy and smooth. I just like saying “drippy” lol.
    • I chopped up part of a chocolate bar here, but 2 tablespoons of chocolate chips will do the trick too!
    • If you baked this in a little skillet and served it warm with vegan ice cream, I could definitely see myself becoming your best friend. Just a suggestion! ;)


Made these because I had almond flour that needed to be finished and no white sugar in the house. 





My thoughts: 

1. I followed the recipe exactly for the first cookie, with only the modification of using mixed nut butter instead of tahini. I made the second cookie with nearly all almond flour, but had to add two teaspoons of whole wheat pastry flour as I had run out of almond flour. 

2. I baked them for 10 minutes. But even after cooling, they were quite soft and crumbled. The interior felt undercooked even though the exterior was a golden brown. Were I to make these again— and I don’t know that I would— I’d leave them in the oven for longer.

Broccoli Cheddar Soup (3 ingredients!)

How to make the broccoli-iest, cheesiest broccoli cheese soup? Skip the overcrowded ingredient list and use broccoli and the cheese multiple ways. That means no fluff like carrot, celery, potato, garlic, flour, cornstarch, vegetable or chicken stock, milk or cream or half-and-half, hot sauce, paprika, mustard, cayenne, or nutmeg. Just lots of broccoli, funky cheddar, and yellow onion. Here’s the game plan: You’ll purée blanched broccoli (including those starchy stalks!), while roasting even more broccoli in the oven for a crispy topping. Likewise, grated cheddar does double duty: yielding a creamy-silky soup and turning those broccoli florets into crackly-edged wonders. (For what it’s worth, that cheesy roasted broccoli is a recipe in itself—one that you could make on its own, pair with some warm bread and vinegary salad, and call it dinner.) Our third and final ingredient, sautéed onions, round out the flavor and add body. Because they end up whooshed in the blender, they serve the same savory role as vegetable stock: supporting, elevating, celebrating the broccoli and cheese.

Ingredients:


  • 1/4 pounds yellow onions (about 2 medium plus 1 large), diced
  • Neutral oil (such as canola or grapeseed)
  • 2 pounds broccoli (about 2 large or 4 medium heads)
  • Kosher salt
  • 8 ounces sharp cheddar, grated
Directions:

  1. Heat the oven to 450°F.
  2. Pour a glug of oil into a stockpot set over medium heat. Add the onions and a big pinch of salt. Cook, stirring occasionally and lowering the heat if needed, until the pieces are soft, translucent, and beginning to brown, about 12 minutes. 
  3. Meanwhile, cut away the broccoli stalks’ tough exteriors. Chop all the stalks into bite-size pieces and add these to a bowl. Chop what’s left into bite-size florets; add half of these to the bowl and the other half to a rimmed sheet pan. 
  4. When the onions are ready, add 6 cups of water to the pot, along with a couple pinches of salt. Increase the heat to bring the water to a boil. 
  5. While the water is heating up, generously drizzle the broccoli florets on the sheet pan with oil and sprinkle with salt. Toss with your hands, then spread out the broccoli as much as possible. Roast for about 15 minutes, until the bottoms are deeply browned and the stalks are knife-tender.
  6. When the onion water reaches a boil, add the broccoli stalks and florets in the bowl. Boil until the water is golden in hue and the broccoli stalks are fork-tender, about 8 minutes. 
  7. Use a slotted spoon or spider to transfer the onions and broccoli from the stockpot to a blender. Blend until smooth. Add all but 1 cup of grated cheddar (we’re using that in a bit) to the blender. Blend again. Add 2 cups of vegetable stock from the stockpot and purée again. You should have about 2 cups of stock remaining; add more to the blender if you want the soup thinner; otherwise, pour the leftover stock into a container and refrigerate or freeze for soupy situations down the road. 
  8. Pour the puréed soup into the emptied stockpot. If needed, set over low heat to stay warm. 
  9. When the roasted broccoli is ready, remove the sheet pan from the oven. Increase the oven to 475°F. Sprinkle the remaining 1 cup of grated cheese on top of the roasted broccoli florets. Return to the oven and roast until the cheese is lacey and deeply golden brown, about 5 minutes (you can rotate the sheet pan if needed for even cooking). Pull from the oven and let cool for a few minutes to slightly crisp. 
  10. Divide the soup into 4 bowls and evenly divide the crispy-cheesy broccoli florets on top.

My notes: 

1. I scaled down because I only had 1.5 pounds of broccoli. It totally worked, but I’d add a little more water next time to the onions. 

2. I chose to not put cheese in the blender, as I read reviews that said that the cheese left a greasy mess in the blender. It worked fine. I blended it as directed— no broth at first, then slowly adding it in. The cheese melted in just fine on stove when added in small batches. 

3. I was a little unsure about whether or not to do the topping, but I’m really glad I did. It’s really yummy mixed in to the soup. I did 10-ish minutes at 450 degrees, and then 3 minutes with the cheese. I didn’t bother increasing the heat to 475 as my oven generally runs hot anyway. 

4. We served it with well toasted TJ’s garlic naan, and had a good meal.
