Maple soy glaze for tofu

 1/2 inch piece of ginger thinly sliced

1/4 cup low sodium soy sauce

3 TBSP pure maple syrup

3 TBSP unseasoned rice vinegar

1/2 tsp crushed red pepper 

Whisk together, then pour over cooked tofu and cook until it thickens up, about 4 minutes
